Fruited Fish (Sweet and Sour)

This is our recipe for the week.










1 kl. - Large Fish Fillet

¼ tsp. - Salt

8 cloves - Garlic (crushed and minced)

4 tsp. - Ginger (Slice Strips)

1 stalk - Leek (spring onion)

115 grams - Tomato Sauce

234 grams - Pineapple Chunks with syrup

1 cup - Water

¼ cup - Sugar

2 tbsp. - Cornstarch

2tbsp. - Water (to dissolve Cornstarch)

2 medium - Red Bell pepper (strip)

4 squares - Tokua (cubbed)

1 small - Cucumber

Procedure:


  1. Fillet Large fish (dalagang bukid) and chunk. Sprinkle with ¼ tsp. rock salt. And fry Tokua until brown.
  2. Fry until golden brown. Set aside.
  3. Sauté 2 cloves garlic (crushed and minced).
  4. 4 tsp. ginger (strips) and 1 long leek
  5. Add original style tomato sauce and pineapple chunks with syrup.
  6. Add 1 cup water and ¼ cup sugar, cornstarch (dissolved in 2 tbsp. water) and salt, pepper to taste. Simmer for 5 minutes.
  7. Add fish and tokua. Stir and simmer for 2 minutes and serve.

My Greatest Valentine Gift

At last my long-time suffering on fixing our computer has finally ended. Heheheh.. This week, hubby decided to buy me a new computer set as a valentine gift. Its a good idea to buy new computer for me to have much time doing the household chores. Spending more time troubleshooting the computer's problem is not healthy, because it can consume most of my time and leaving me headache as well. I am back... blogging here i come... go go go go..

Fish Ball Recipe




Last week I started attending my once in a week meeting of culinary class. I have here our first recipe and the picture of our finished product.



½ kl. (14 oz.) - White Fish Fillets

5 cups - Water

1pc. - Onion finely chopped

25 g. (1/4c) - Spring Onion

½ cup - All purpose flour

2pcs. - Lightly beaten eggs

1tsp. - Salt

½ tsp. - Ground black pepper

1 cup - Oil

4 tsp. - Evaporated Milk

SWEET AND SOUR SAUCE

½ cup - Sugar

½ tsp. - Salt

¼ cup - Tomato catsup

¼ cup - Vinegar

2 tbsp. - Corn starch

1 cup - Water

Fish Procedure:

1. Clean fish fillet well, making sure to remove any remaining fish bone.

2. Put the water in a pot and bring to boil.

3. Drop the fish fillet into the boiling water in a pot and let cook for about 5 minutes or until flesh is slightly firm but not flocky.

4. Remove fillets from water. Mash the fillets and mix with onion, garlic, spring onions flour and eggs. Season with salt and pepper and mix thoroughly to form a smooth butter. Shape the butter into small balls by using spoon.

5. Heat the oil in a wok. Place the balls in a 1 by 1 making sure each ball is completely submerged in the oil for even cooking. Cook by batch.

6. Remove from heat and drain over paper towel.

Sauce Procedure:

1. Put the sugar, tomato ketchup and vinegar in a sugar pan. Simmer over low heat until the sugar dissolved. Stir in the flour and water mixture.

2. Simmer stirring occasionally, until the sauce thickens. 3. Remove from the heat and set aside.

A Valentine Gift

A Black Friday the 13th Party







A day before valentines was Friday the 13th. A black Friday the 13th party has been organized by hubby's officemates and I was invited to join. I really enjoyed their company especially everyone cooperates. Some were playing billiard, some were dancing and singing. For a long busy week of work, all i could say is that having such gathering is worth to unwind and releases pressure.

Moving to New House

For these past days, hubby and I were busy packing our things ready for transfer to a new place. Just yesterday afternoon we moved out .

Today, we spend the whole day cleaning the new house and partly unpacking things. It's a long week for me ahead to finish everything in our house.

Created To Overcome

When I get up this morning and read today's word from Joel Osteen Ministries "Created to Overcome". I asked myself why we were created to suffer and overcome? The thought taken from the bible says "You are of God, little children, and have overcome them, because He who is in you is greater than he who is in the world" (I John 4:4)

For the past days I never realize that a great challenge might come. In spite the fact that recently my family is facing a situation that seems impossible to overcome and even if we haven't seen how things worked out for good but God tells us that we were created to overcome. As a child of the Most High God, the Greater One lives on the inside of us.

There are seeds of faith planted in your heart, and the way you activate those seeds is by the words of your mouth. Begin to declare, "I am bigger than this problem. I am created to overcome. I am destined to live in victory because the Greater One lives inside of me."

A question never ends.. I then ask myself again, " Am I going to be driven by pressures? Guilt? Bitterness? Materialism? Or am I going to be driven by God's purposes (for my life)?".

Thank God for His unmeasurable love, upon declaring how great is He than our problems, everything seem so easy even if we don't get anything done else today, all we are up to is to know more about Him. God didn't put us on earth just to fulfill a to-do list. He's more interested in what we are than what we do. That's why we're called human beings, not human doings.

Our 1st year Wedding Anniversary



We are thankful to God for being with us always in our marriage. For a year had past and the years to come, we pray that God will continue to make us strong with His Strong Foundation of Love that unite us.

"Now thanks be to God who always leads us in triumph in Christ…" II Corinthians 2:14

God promises to always lead us into victory! We keep on praying and believing that no matter what's happening in the world around us nothing can hold us back and no weapon formed against us that will ever prosper. The brightest days are right out in front of us, and God’s plan is to bring us blessing and victory all the days of our lives.

Misamis Orriental, Flash Flood - A Night to Remember

January 11, we were at the Bus terminal Iligan City 6pm waiting for an air-con bus to arrive.

After an hour of waiting we wonder why there was no bus coming at the terminal. Only a bridge in Cagayan de Oro was damage due to excessive rain causing the water flow from the river to get bigger and the current stronger. When we neared Alubijid, Misamis Oriental, the traffic started and it would take a lot of waiting before it starts moving again.

Lots of houses were affected by the flood and we saw lots of people outside their houses together with their appliances and clothes. All we can see is the roof of their houses and some who had 2 story houses staying in second floor of their houses. Lots of people in Alubijid, El Salvador, Opol and Bulua were affected.



After a few hours of waiting for our bus to move, we realized that we were stranded at Alubijid. We decided to walk through and not to wait for the bus. Most of the passenger who were stranded also decided to walk. There we realized if we did not walk we will be stranded until the next day.

All buses and private vehicles could not pass through the bridge of Opol. As we pass by Opol; there we saw the damage caused by the flood and people suffer from too much cold and the bridge were destroyed by the uncontrolled current of water. Passengers were allowed to cross the bridge but no vehicles were allowed to cross over it.

As we cross the bridge, we were blessed as buses accommodate stranded passengers and took us to Cagayan de Oro City Bus Terminal. We thought that won’t have problem after arriving at the bus terminal. Yet, again… hundred of people huddled together in groups as they waited for transportation that would take them to the city proper. So, we decided to take a walk all the way to our house. But lucky people, God sent us aid, as the first jeepney arrives to fetch stranded people from the bus- we were the first one to ride it. At exactly 11:30 we arrived at DV Soria after so many adventures? Ahh misadventures? It is for you to decide.
